Sweet Pepper and Soy Sausage Pilaf

| This
one pot meal is full of texture and bold flavors.
The results of this dish are somewhere in
between Jambalaya and risotto. Tender
zucchini and soy based sausage form wonderful
partners in this pilaf. If you like
spicy, add some crushed red chili flakes. |

| Ingredients: |
1 tablespoon
olive oil
1 small onion, chopped
1 medium red pepper, seeded, chopped
½ green pepper, seeded and chopped
1 stalk celery, chopped
14 ounce package Gimme
Lean™ sausage style
½ teaspoon thyme
1-1/2 cups raw basmati rice
1 cup tomato, chopped ( fresh or canned with
juice)
1-3/4 cups of vegetable stock
2 medium zucchini, diced into ½ inch
squares
½ cup frozen or fresh peas
salt and cayenne pepper to taste
garnish: 1 bunch scallions, minced |

| Instructions: |
| In
a heavy bottom saucepot, heat the olive oil
over medium heat. Sauté the onion,
pepper and celery for 1 minute stirring often.
Add the Gimme Lean and break apart into chunks
mixing into the sautéed vegetables.
Add the thyme and the rice and stir to coat
well. Add the tomato and stock, bring to a
boil, lower to a simmer and cover. Simmer
for 15 minutes, add the zucchini and peas,
and continue to cook covered for an additional
10 minutes.
Season to taste
with salt and cayenne, and serve on a large
serving platter garnished with minced scallion.

Tip: You may add cooked shrimp
to this dish for another flavor experience.
