Veggie Sloppy Joe

My family doesn't normally like it when soy products try to masquerade as meat. Don't try to fool them, they say, or there will be trouble. So with that introduction, let me just say that this recipe is their favorite exception to their own rule. They love this so much, they don't want the beef version any more - and that says a lot, as both my husband and son are confirmed carnivores!

Ingredients:
2 T. olive oil
1 pkg. Gimme Lean™ Beef flavor
1 cup minced onion
2 medium cloves garlic, minced
1/2 tsp. salt
1 15-oz can crushed tomatoes
1 T. plus 1 tsp. prepared mustard
1 T. plus 1 tsp. cider vinegar
1 T. light brown sugar
black pepper to taste
cayenne to taste (optional)
Toasted hamburger buns
 
Instructions:
  1. Heat 1 tablespoon of the olive oil in a large skillet. Crumble in the GimmeLean™, and cook over medium heat for 5-8 minutes, or until browned. (scrape the bottom of the pan with a spatula as you go)
  2. Add another tablespoon of olive oil to the skillet. Toss in the onion and saute over medium heat for 5 minutes. Add the garlic and salt, and continue to saute for 2 minutes longer.
  3. Add the tomatoes, mustard, vinegar, and sugar to the mixture. Stir well and heat to a boil, then lower the heat and cover the pan. Cook undisturbed over very low heat for 10 minutes.
  4. Season to taste with black pepper, and, if desired, cayenne. Serve hot, over freshly toasted open-faced buns.
