Vegetarian Potstickers

This is a vegetarian version of my favorite recipe. I make potstickers for every occasion and everyone loves them. Like most of the recipes I put on the site, there are so many options with this-- you can take out the ginger and add hot peppers…it goes on and on! The folding technique is difficult but very rewarding. Make sure you have a large skillet with a tight fitting lid, it is vital to the success of the recipe.

Ingredients:
Stuffing:
½ package Gimme Lean!™ beef (7oz.)
¼ head cabbage very thinly sliced
1tbsp freshly minced ginger
1tbsp soy sauce (or more to taste)
½ c green onions in ¼ inch pieces
Other:
4tbsp peanut oil
30 round gyoza wrappers
Bowl of cold water
 
Instructions:
  1. Place all stuffing ingredients in a bowl and mix thoroughly
  2. Take one gyoza wrapper floured side up in the palm of your less dominant hand

  3. With the other hand, dip your index finger into the water and wet the outside edge of the wrapper

  4. Take a teaspoon and place one teaspoon of the stuffing mixture in the center of the wrapper

  5. Fold the wrapper over the stuffing-the result will be a half circle shaped dumpling. The edges should touch all the way around, if not take a little stuffing out

  6. Starting at the left corner, fold a small triangle over the back and squeeze to seal.
  7. With your index fingers and thumbs about ½ inch apart, take hold of the outer edge of the dumpling and push the left edge over the right edge and squeeze.

  8. Repeat step seven until you are around the entire edge of the dumpling, then fold the right corner under to seal the dumpling (the result should look like the picture below)

  9. Repeat steps 2-8 until your fingers fall off (or you run out of stuffing) :-)

  10. You're ready to cook! Heat the peanut oil in a 12-inch skillet (the larger your skillet, the more you can cook at once) and place 10 dumplings at a time into the skillet. You will need to repeat this until you get to thirty.

  11. Let them brown (not fry) on both sides.

  12. Fill the lid with 1/8 cup water, and carefully flip the lid on top of the skillet.

  13. Let steam for about a minute and remove from burner-DO NOT TAKE THE LID OFF WHILE ON THE BURNER, hot oil and water don't like each other and retaliate by jumping out onto you!!!

  14. Keep warm until ready to serve.
