Tropical Fruit Sunshine Bread with Honey Rum Glaze

This sweet bread is dense, rich with fruit and sweet spicy flavor. We raised the bar on banana bread. Try it any time for breakfast or a snack. Spread a warm slice with cream cheese and top with sliced fresh bananas or figs.
 
Measures Translation Table
 
Ingredients:
1 3/4 cup all purpose flour
3/4 tsp. baking soda
3/4 tsp. baking powder
1 cup light brown sugar
½ teaspoon cinnamon
¼ teaspoon nutmeg
2 teaspoons minced fresh gingerroot
1/4 teaspoon salt
2 eggs
1/2 stick softened butter
1/2 cup V8 Splash® Smoothie Peach Mango
1 ripe banana, mashed
1 ripe peach or ½ rip mango, chopped
1/2 cup chopped pecans

Optional Honey Rum Paint Glaze
1 tablespoon honey mixed with 1 tablespoon rum

 
Instructions:
  1. Preheat oven to 350°F.
  2. In medium sized bowl combine all the dry ingredients and the minced gingerroot.
  3. In a separate bowl, combine eggs, softened butter, and smoothie beverage and blend lightly with electric beater.
  4. Fold the mashed fruit and nuts into the liquid ingredients. Fold the dry ingredients into the liquid and spoon into a standard, lightly greased loaf pan.
  5. Bake uncovered in the center of the oven for approximately 40-45 minutes.
  6. Let stand on baking rack for 15 minutes before serving. If desired, brush with honey rum paint while still warm.
