Tofu Terra Cotta

Steve Petusevsky
Serves: 6

This simple crusty tortilla chip casserole can be eaten piping hot from the oven or at room temperature. The tofu absorbs the bold tomato, chili and cilantro flavor hiding it under a crispy corn tortilla crust. Think of it as a Mexican lasagna with protein charged spirit.

½ red onion, very thinly sliced

Instructions:
  1. Mix salsa, tomato juice and cilantro together. Pour a small amount on the bottom an ovenproof 9 inch square pan.
