| This
simple crusty tortilla chip casserole can
be eaten piping hot from the oven or at room
temperature. The tofu absorbs the bold tomato,
chili and cilantro flavor hiding it under
a crispy corn tortilla crust. Think of it
as a Mexican lasagna with protein charged
spirit. |

| Ingredients: |

12.3 oz. cartons of Mori
Nu® Extra Firm Silken Tofu, cut into
1/2 inch thick steaks
1 cup tomato salsa
1 cup tomato juice
¼ cup chopped fresh cilantro
½
cup yellow tortilla chips, crushed
½ cup blue corn chips, crushed
1 teaspoon paprika
½
red bell pepper, very thinly sliced
½ green bell pepper, very thinly
sliced
1 small tomato, very thinly sliced
½ red onion, very thinly sliced

| Instructions: |
- Mix salsa, tomato juice and cilantro
together. Pour a small amount on the bottom
an ovenproof 9 inch square pan.
- Arrange tofu slices over sauce; pour
remainder of sauce over surface.
- Arrange thinly sliced vegetables over
the tofu. Scatter crushed tortilla chips
over top; sprinkle with paprika.
Bake for 30 minutes until crust is crispy
and tofu is heated through.
