| Ingredients: |

tablespoon olive oil
1 cup chopped onion
28-ounce can plum tomatoes
1/4 cup chopped cilantro
1 teaspoon dried basil
1/2 teaspoon sugar
1/2 teaspoon salt
1 cup orange juice
1 scoop GNC
Soy Protein, Unflavored
Freshly ground pepper
1 scallion, green only, chopped |

| Instructions: |
- In a medium, heavy pot, heat the oil.
- Stir in the onion, cooking until it
is translucent, 4 minutes.
- Add the tomatoes, with their liquid.
Mash them with a wooden spoon to break
them up.
- Add the cilantro, basil, sugar, and
salt. Cover and simmer 20 minutes.
- Pour the soup into a food processor
and process to puree.
- Mix the soy protein powder into the
orange juice, blending well (there may
be a few lumps). Pour mixture into
tomato puree and process again until smooth.
- Season to taste with pepper.
- Pour the hot soup into bowls.
- Garnish with the scallion, if desired.
Serve immediately.
