Terrific Tomato Soup

Serves: 6
 
Soy protein makes this vibrant, flavorful soup extra special.
 
Measures Translation Table
 
Ingredients:
1 tablespoon olive oil
1 cup chopped onion
28-ounce can plum tomatoes
1/4 cup chopped cilantro
1 teaspoon dried basil
1/2 teaspoon sugar
1/2 teaspoon salt
1 cup orange juice
1 scoop GNC Soy Protein, Unflavored
Freshly ground pepper
1 scallion, green only, chopped
 
Instructions:
  1. In a medium, heavy pot, heat the oil.
  2. Stir in the onion, cooking until it is translucent, 4 minutes.
  3. Add the tomatoes, with their liquid. Mash them with a wooden spoon to break them up.
  4. Add the cilantro, basil, sugar, and salt. Cover and simmer 20 minutes.
  5. Pour the soup into a food processor and process to puree.
  6. Mix the soy protein powder into the orange juice, blending well (there may be a few lumps).  Pour mixture into tomato puree and process again until smooth.
  7. Season to taste with pepper.
  8. Pour the hot soup into bowls.
  9. Garnish with the scallion, if desired. Serve immediately.
