Taco Salad

A taco salad which is healthy and tastes great?! Take a look at all of the vegetables in this one - plus soy protein! Refreshing and delicious, this is a perfect item to take to a summer picnic.

Ingredients:
1 pkg. GimmeLean!™ Beef flavor
3/4 lb. lean ground beef
1 (1.25oz) pkg. dry taco seasoning mix
3 cups shredded lettuce
2 ripe tomatoes
1 medium onion
2 green peppers
1 1/2 cups fat free Catalina dressing
 
Instructions:
  1. Cook ground beef until brown; drain. Add GimmeLean!™ and cook until crumbled together. Add taco seasoning ; chill in refrigerator.
  2. Cut tomatoes, onion, and green peppers into small pieces. Add chopped vegetables and lettuce to chilled meat mixture.
  3. Add dressing to mixture and toss gently. Serve cold.

You may mix low fat cheese and/or tortilla chips into the mixture. Or top with a dollop of sour cream.
