taco salad which is healthy and tastes great?!
Take a look at all of the vegetables in this
one - plus soy protein! Refreshing and delicious,
this is a perfect item to take to a summer
picnic. |

| Ingredients: |
1 pkg.
GimmeLean!
Beef flavor
3/4 lb. lean ground beef
1 (1.25oz) pkg. dry taco seasoning mix
3 cups shredded lettuce
2 ripe tomatoes
1 medium onion
2 green peppers
1 1/2 cups fat free Catalina dressing |

| Instructions: |
- Cook ground beef until brown; drain.
Add GimmeLean! and cook until crumbled
together. Add taco seasoning ; chill in
refrigerator.
- Cut tomatoes, onion, and green peppers
into small pieces. Add chopped vegetables
and lettuce to chilled meat mixture.
- Add dressing to mixture and toss gently.
Serve cold.
You may mix low fat cheese and/or tortilla
chips into the mixture. Or top with a dollop
of sour cream.
