Cover sweet potatoes with water in stock
pot and boil until tender; drain.

In large mixing bowl, mash sweet potatoes
and margarine until smooth. Add eggs
and sugar; mix well.

Combine baking powder and flour and add
to sweet potato mixture. Add nutmeg,
vanilla and 8th Continent. Fold in
GNC Soy Protein powder.
4.
Pre-cook pie crusts in 350°F oven until
lightly browned (no more than 15 minutes).
Pour in sweet potato mixture. Cook
for 45-55 minutes or until pie crust is
brown and filling is firm.
5.
Place on racks to cool before cutting.
