Bay's Best Sweet Potato Pie

Serves: 12 (makes 2 pies, 6 servings each)

Ingredients:

5 small-medium sweet potatoes (peeled and cut in half)

1 stick margarine (butter may be used)

4 eggs

2 cups sugar

2 teaspoons baking powder

2 tablespoons flour

1 tablespoon nutmeg

1 teaspoon vanilla extract

1/4 cup 8th Continent™ Soymilk Vanilla

5 scoops GNC Soy Protein Unflavored

2 ready-made pie crusts 

 
Instructions:

1.  Cover sweet potatoes with water in stock pot and boil until tender; drain.

2.  In large mixing bowl, mash sweet potatoes and margarine until smooth.  Add eggs and sugar; mix well. 

3.  Combine baking powder and flour and add to sweet potato mixture.  Add nutmeg, vanilla and 8th Continent.  Fold in GNC Soy Protein powder.

4.  Pre-cook pie crusts in 350°F oven until lightly browned (no more than 15 minutes).  Pour in sweet potato mixture.  Cook for 45-55 minutes or until pie crust is brown and filling is firm. 

5.  Place on racks to cool before cutting.
