| This
satisfying summer salad is a meal in itself.
It is fabulous to look at, and is a major
source of soy protein. This goes well with
any salad dressing you have on hand. |

| Ingredients: |
1 lb.
mixed green leafs
1 bunch broccoli, cut into florets
3 carrots, peeled and cubed
3 oz. soy mozzarella cheese, cubed
3 oz. soy cheddar cheese, cubed
3 oz. Lightlife
Smart Deli® Slices, Turkey
3 oz. Lightlife
Smart Deli® Slices, Ham
1 medium cucumber, sliced thinly
3 Roma tomatoes, cut into 4 wedges each
1/2 cup pitted black olives
Dressing of choice |

| Instructions: |
- Line a large bowl or six individual
salad bowls with the mixed greens.
- Top with the broccoli and carrots.
- Arrange the soy cheeses and soy meats
alternatively in the center of the bowls,
and garnish with cucumbers, tomato wedges,
and olives.
- Drizzle about 2 tablespoons of dressing
over each salad.
