Splish Splash Seafood Salad

This salad is healthy, using both vegetables and fruit.  It is also just as pleasing to look at as it is tasty.  It tastes best when chilled before serving.

Ingredients:

Salad Dressing

1 cup V8 Splash Smoothie® Peach Mango

1/2 cup low fat mayonnaise

1 teaspoon Dijon mustard

1/2 teaspoon Worcestershire sacue

1/4 teaspoon hot sauce

1 teaspoon cornstarch

Seafood Salad

1/2 cup fresh or frozen peach chunks

3/4 cup mango chunks

1 tablespoon vegetable oil

1/4 cup finely chopped sweet onion

1 Tablespoon fresh lemon juice

1/8 teaspoon hot sauce

2 teaspoons seafood seasoning

1 pound medium shrimp, peeled

2 pounds bay scallops

1/2 cup frozen peas, thawed

1 medium red bell pepper, diced

 
Instructions:

Salad Dressing:

1.  Place V8 Splash Smoothie, mayonnaise, mustard, Worcestershire sauce and hot sauce in a blender and mix.  Remove 1/4 cup dressing and mix with corntarch in a small container.  Place remaining dressing in a medium saucepan and heat over medium heat until boiling. 

2.  To saucepan add reserved dressing and cornstarch.  Stir until thickened, about 5 minutes.  Cool and refrigerate.

Seafood Salad:

1.  Place vegetable oil in a medium skillet over medium heat and saute the onions until tender but not brown.  To skillet add lemon juice, hot sauce and seafood seasoning.  Stir.

2.  Add shrimp, scallops and peas to skillet.  Saute until shellfish is done, shrimp will be pink and scallops will be translucent, about 5 minutes.  Set aside.

3.  Place fruit chunks, salad dressing and seafood sald in a large bowl; stir until evenly coated and mixed.  Chill until serving.
