Spicy Calico Hash

This colorful dish is excellent for brunch but also makes a good quick and
healthy weekday supper.
 
Measures Translation Table
 
Ingredients:
5 tablespoons (or more) olive oil
2 cups chopped green onions
3 cups diced Lightlife Lean Links™ (Italian)
1 cup chopped red bell pepper
1 cup chopped yellow bell pepper
5 cups southern-style frozen hash brown potatoes from 32-ounce bag
2 tablespoons chopped fresh thyme or 2 teaspoons dried
1 teaspoon Cajun or Creole seasoning
Salt and freshly ground pepper to taste
 
Instructions:
  1. In a large skillet, heat 3 tablespoons oil over medium heat.
  2. Add 1 1/2 cups green onions, the links, and bell peppers.
  3. Cook, stirring often, until the vegetables begin to soften, about 5 minutes.
  4. Add the potatoes, thyme, and Cajun seasoning and mix well.
  5. Reduce the heat to medium-low, cover and cook for 8 minutes.
  6. Uncover and continue cooking until potatoes are tender and crusty, occasionally scraping up browned bits, adding more oil by tablespoonfuls if potatoes are sticking, about 7 minutes longer.
  7. Mix in remaining the 1/2 cup green onions.
  8. Season to taste with salt and pepper.
