| Refreshing
and fortifying, this is more than soup, it's
a meal. Velvety smooth with chunks of
luscious sweet fruit in each spoonful, this
soup can be a quick breakfast or prelude to
light lunch or a dinner. |

| Ingredients: |

containers of Snapple-a-Day™ Meal
Replacement Tropical Blend
1
peach, skin on, pitted, chopped
1
ripe banana, chopped
1
cup fresh pineapple, chopped (or canned,
drained)
1/4
cup Mandarin oranges, drained
4
sprigs fresh mint, stems removed, chopped
juice
of 1 lime
pinch
of ground coriander

| Instructions: |

Combine
Snapple-a-Day™ beverage, chopped fruits,
mandarin orange sections, mint, lime juice
and coriander in a large mixing bowl; whisk
together. Allow to chill in the refrigerator
at least 2 hours, or overnight if possible.
Chef
Steve's Tip: Serve in a clear
glass bowl or try individual portions in
a hollowed out melon half. Garnish
with additional mint sprigs.
