Shells with Soy Sausage Bolognese

You can also use 50 percent ground beef and 50 percent soy sausage to introduce the product to your family.

Ingredients:

3 tablespoons olive oil

1 small onion, chopped

1 package (14oz) Yves Ground Round

2 cloves garlic, minced

1 (28oz) can diced tomatoes with liquid

1 tablespoon brown sugar

1/4 cup fresh Italian parsley

1 pound pasta shells

soy parmesan cheese, for topping (optional)

 
Instructions:

1.  Heat the olive oil in a large saucepan over high heat and saute the onions and soy meat until they are browned, about 5 minutes.  Add the garlic and saute for 1 more minute.

2.  Stir in the tomatoes, brown sugar and parsley.  Lower the heat and simmer for 15 minutes.

3.  Cook the pasta shells while the sauce is simmering, and serve.  Top with parmesan cheese if desired.
