Heat the olive oil in a large saucepan over
high heat and saute the onions and soy meat
until they are browned, about 5 minutes.
Add the garlic and saute for 1 more minute.

Stir in the tomatoes, brown sugar and parsley.
Lower the heat and simmer for 15 minutes.
3.
Cook the pasta shells while the sauce is
simmering, and serve. Top with parmesan
cheese if desired.
