Scalloped Potatoes

Serves: 4-6
 
Preparing this venerable side requires only a few simple ingredients. You've probably got them in your kitchen right now.

Ingredients:
6 white potatoes thinly sliced (2 lbs.)
3 cups soymilk
1 1/2 scoops GeniSoy® Ultra-XT Protein Powder (1/4 cup plus 2 Tbsp.)
2 tsp. salt
1/2 tsp. freshly ground black pepper
1 onion, chopped
2 Tbsp. olive oil
Sprinkle a little parsley or paprika on top to add a splash of color
 
Instructions:
  1. Peel and slice the potatoes in a food processor or thinly by hand
  2. Blend the soymilk, protein powder, salt, and pepper in a blender until smooth
  3. Preheat the oven to 350° F
  4. Build layers of sliced potatoes, then chopped onions, then dribble on the olive oil
  5. Pour the soymilk mixture over all, and cover
  6. Bake for 1 1/2 to 2 hours or until the potatoes are soft
