| Ingredients: |
6 white
potatoes thinly sliced (2 lbs.)
3 cups soymilk
1 1/2 scoops GeniSoy®
Ultra-XT Protein Powder (1/4 cup plus
2 Tbsp.)
2 tsp. salt
1/2 tsp. freshly ground black pepper
1 onion, chopped
2 Tbsp. olive oil
Sprinkle a little parsley or paprika on top
to add a splash of color |

| Instructions: |
- Peel and slice the potatoes in a food
processor or thinly by hand
- Blend the soymilk, protein powder, salt,
and pepper in a blender until smooth
- Preheat the oven to 350° F
- Build layers of sliced potatoes, then
chopped onions, then dribble on the olive
oil
- Pour the soymilk mixture over all, and
cover
- Bake for 1 1/2 to 2 hours or until the
potatoes are soft
