Raisin Bread Pudding with Whiskey Sauce

Ingredients:
1 cup evaporated skim milk
1/4 cup nonfat egg substitute
2 scoops Vanilla Personal Edge® Fat Metabolizer Drink Mix
3 Tbsp. granulated sugar
1/2 tsp. vanilla extract
1/4 tsp. ground cinnamon
3 slices raisin bread, cut into 3/4-inch cubes
Vegetable cooking spray
Whiskey Sauce Ingredients:
1 Tbsp. granulated sugar
1 Tbsp. water
2 Tbsp. whiskey
2 tsp. reduced-calorie margarine
1 tsp. cornstarch
 
Instructions:
  1. Combine first 6 ingredients
  2. Beat with an electric mixer until well blended
  3. Stir in bread
  4. Divide mixture evenly between two 6-oz. oven-proof custard cups coated cooking spray
  5. Place cups in an 8-inch square baking pan6. Add hot water to pan to a depth of 1 inch
  6. Bake at 350 degrees for 35 to 40 minutes or until golden brown on top (pudding will not be set in center)
  7. Serve warm. Spoon whisky sauce over pudding

Instructions for Whiskey Sauce:

  1. Combine all ingredients in a small saucepan
  2. Cook over medium heat stirring constantly until mixture thickens
