Raisin Bread Muffins

PREP & BAKE TIME: 50 minutes

These delicious raisin bread pudding muffins may be served for a quick, healthy breakfast.

Ingredients:
1 1/2 cup 8th Continent™ Soymilk Original flavor
4 large egg whites
1/4 cup sugar
1 T. cinnamon
1/4 tsp. nutmeg
1 T. vanilla extract
1 T. margarine, melted
1/4 cup dark raisins
12 slices raisin bread
 
Instructions:
  1. Preheat oven to 375°F. Spray 12 muffin cups generously with nonstick cooking spray.
  2. Cut bread slices into 1/2" pieces; set aside.
  3. In large bowl, combine first 7 ingredients; mix well. Stir in raisins and bread pieces. Let mixture sit for 5 minutes.
  4. Spoon mixture into prepared muffin cups. Bake until browned & firm, about 35 minutes. Cool on wire rack before removing from cups.
