& BAKE TIME: 50 minutes
These delicious raisin bread pudding muffins
may be served for a quick, healthy breakfast.

| Ingredients: |
1 1/2
cup 8th
Continent Soymilk Original flavor
4 large egg whites
1/4 cup sugar
1 T. cinnamon
1/4 tsp. nutmeg
1 T. vanilla extract
1 T. margarine, melted
1/4 cup dark raisins
12 slices raisin bread |

| Instructions: |
- Preheat oven to 375°F. Spray 12
muffin cups generously with nonstick cooking
spray.
- Cut bread slices into 1/2" pieces;
set aside.
- In large bowl, combine first 7 ingredients;
mix well. Stir in raisins and bread pieces.
Let mixture sit for 5 minutes.
- Spoon mixture into prepared muffin cups.
Bake until browned & firm, about 35
minutes. Cool on wire rack before removing
from cups.
