| Ingredients: |
Filling:
2 cups canned or cooked pumpkin
1 cup non-dairy milk
3/4 cup brown sugar
1 scoop GeniSoy®
Ultra-XT Vanilla Shake (1/4 cup)
1 Tbsp. molasses
1 tsp. cinnamon
1/2 tsp. powdered ginger
1/2 tsp. nutmeg
1/4 tsp. cloves
1/4 salt
1 tsp. vanilla extract
Crust:
1 (9-inch) unbaked pie crust |

| Instructions: |
- Preheat the oven to 350° F
- Combine all the filling ingredients
in a large bowl, and process in 2 batches
in a blender until smooth
- Combine the batches in a medium bowl,
and pour into the unbaked pie crust
- Bake for 60 minutes
- Cover the edges of the pie crust with
foil if they begin to brown too quickly
- Cool on a rack, then refrigerate overnight
before serving
- Top with soy whipped topping, if desired
