Pumpkin Pie

Ingredients:
Filling:
2 cups canned or cooked pumpkin
1 cup non-dairy milk
3/4 cup brown sugar
1 scoop GeniSoy® Ultra-XT Vanilla Shake (1/4 cup)
1 Tbsp. molasses
1 tsp. cinnamon
1/2 tsp. powdered ginger
1/2 tsp. nutmeg
1/4 tsp. cloves
1/4 salt
1 tsp. vanilla extract
Crust:
1 (9-inch) unbaked pie crust
 
Instructions:
  1. Preheat the oven to 350° F
  2. Combine all the filling ingredients in a large bowl, and process in 2 batches in a blender until smooth
  3. Combine the batches in a medium bowl, and pour into the unbaked pie crust
  4. Bake for 60 minutes
  5. Cover the edges of the pie crust with foil if they begin to brown too quickly
  6. Cool on a rack, then refrigerate overnight before serving
  7. Top with soy whipped topping, if desired
