Perky's™ Apple Crisp

A bed of fruit baked under a sweet, crunchy topping makes an irresistible dessert, especially when served warm.

Note:  Although this recipe is written for apples, you can use any combination of fruit and make your own variations.  Similar types go well together, like apples with pears or quinces, or a combination of stone fruit (peaches withe plums, apricoat, or cherries).  If you like, you can accessorize with berries for touches of bright color and tart, contrasting flavor.

Ingredients:

5 to 6 cups sliced apples

1 tablespoon fresh lemon juice

1 tablespoon flour

1 tablespoon sugar

1 cup Perky's™ Nutty Grains & Soy™ Cereal, ground to a coarse meal in a blender

3/4 cup rolled oats

1 tablespoon flour

1/8 teaspoon salt

2 tablespoons brown sugar

1/4 teaspoon cinnamon

2 tablespoon minced walnuts (optional)

3 tablespoons unsalted butter, melted

vanilla ice cream, optional

 
Instructions:

1.  Preheat the oven to 375°F. 

2.  Place the fruit in a medium-sized bowl, and toss with the lemon juice.  Sprinkle in the flour and sugar and toss until fairly evenly coated, then transfer the mixture to an ungreased 9-or10-inch pie pan.  Don't clean the bowl.

3.  Use the same bowl to make the topping.  Combine the ground Perky's cereal with the remaining ingredients.  Crumble this mixture over the fruit and pat it into place.

4.  Place the pan on a baking tray (to catch any juices that bubble over), and bake in the center of the oven for 20 to 25 minutes, or until brown on top.  Cool for 15 minutes before serving.  (it will still be plenty hot!)

Serve hot, warm, or at room temperature, with a little vanilla ice cream on the side, if desired.
