Apricot Oatmeal

| Lumpy,
bland, tasteless. Forget everything you think
oatmeal has to be and try this version that
includes orange juice for a hint of tang and
sweetness (yes, orange juice!). |

| Ingredients: |
1 cup
old-fashioned rolled oats
1 1/4 cups cold water
1/2 cup orange juice
2 Tbsp. Chopped dried apricots
1/4 tsp. nutmeg
2 Tbsp. GeniSoy®
Ultra-XT Protein Powder
Tiny pinch of salt
Flavoring options:
Sweetener of your choice
2 tsp. organic flax oil
2 Tbsp. Chopped walnuts, almonds, or pecans,
raw, or lightly pan-toasted |

| Instructions: |
- Combine all the ingredients except
the protein powder and flavoring options,
in a medium saucepan
- Bring to a boil
- Cover and reduce the heat to low
- Simmer 5 minutes, stirring once or twice
- Remove from the heat, add the protein
powder, cover
- Let sit for 2 to 5 minutes
- Stir in the sweetener and flax oil,
if using
- Sprinkle 1 tablespoon nuts over each
serving, if desired
Tip: To pan-toast the nuts, lightly roast
them in a dry skillet over medium heat,
stirring often, until fragrant and golden
brown.
