Old Fashioned Sausage Stuffing

Serves: 12
 
This stuffing is moistened with vegetable broth rather than butter, for a satisfying lowfat Thanksgiving favorite.

Ingredients:
1 T. canola oil
1 cup finely chopped celery
1 cup sliced mushrooms
1 cup medium onion, chopped
1 (14-oz) pkg. GimmeLean!™ by Lightlife, Sausage Style
1/4 cup snipped parsley
1 tsp. dried sage leaves
1 (12-oz) box seasoned cornbread dressing
1 1/2 cups vegetable broth
 
Instructions:
  1. Lightly coat large skillet with no-stick vegetable spray. Add oil. Over medium heat, cook and stir the celery, mushrooms and onion until tender, about 5 minutes. Add the GImmeLean!™ sausage. Cook and stir until crumbly. Stir in parsley and sage. Remove from heat.
  2. Lightly coat a 4 quart casserole dish with no-stick spray. Add one-third of the sausage mixture to the prepared casserole dish. Scatter one-third of the cornbread dressing over the sausage layer. Repeat layering. Drizzle broth to moisten evenly. Toss lightly. Cover with foil. Bake in 350°F oven for 30-40 minutes.
