No Bake Chocolate Peanut Butter Nuggets

Serves: 5 (2 nuggets per serving)
 
My kids are crazy about these healthy treats, and are amazed that they are actually "good for you." I feel good about letting my kids snack on these, and since we've been making them and keeping our refrigerator fully stocked, all desires for candy bars seem to have magically vanished.

 
Measures Translation Table
 
Ingredients:
1/2 cup high quality peanut butter (salted)
1 tablespoon light-colored honey
2 scoops Slim Fast® with Soy Protein Chocolate Delite Flavor
2-3 tablespoons milk
1/2 cup semisweet chocolate chips
1/2 cup peanuts (whole or coarsely chopped)
 
Instructions:
  1. Measure the peanut butter into a medium-sized bowl and mash it with the back of a spoon. (if the peanut butter seems stiff, place it in the microwave on 'high' for up to 1 minutes to soften it.)
  2. Mix the honey into the peanut butter, then add the Slim Fast and the milk, mashing everything together until uniform.
  3. Add the chocolate chips and peanuts, mashing them in until they adhere to the mixture.
  4. Lightly dampen your hands, and form balls approximately 1 1/2" in diameter. Place the nuggets on a plate, and freeze for about 15 minutes. (This will keep them from sticking together). Transfer the nuggets to a tightly covered container or a zip-style plastic bag, and store in the refrigerator.
