No-Bake Perky's™ Butterscotch Nut Balls

Serves: 24 (1-inch balls)
 

Very crunchy and utterly delicious, these easy balls are a cross between a cookie and a candy.  They keep a long time (several weeks - if they don't get eaten first!) in the refrigerator or freezer, and are filled with nutritious nuts, so they are a good source of protein and healthy oil. 

Note: You can use crunchy or smooth peanut butter, but be sure that it is salted.

Ingredients:

nonstick spray

1 cup natural peanut butter

1 cup butterscotch chips

2 1/2 cups Perky's™ Nutty Grains & Soy™ Cereal

1 1/2 cups chopped nuts (pecans and/or walnuts), lightly toasted

 
Instructions:

1.  Lightly spray several dinner plates or a cookie tray with nonstick spray.

2.  Place the peanut butter in a medium-sized saucepan over low heat.  Stir and heat until it becomes very soft, like a thick soup.  This will only take about 3 minutes.  Stir in the butterscotch chips and remove from heat.

3.  Add the cereal and nuts, and stir until all the particles are coated.  Drop by rounded teaspoons onto the prepared plates or tray.  Refrigerate or freeze until firm, then transfer to a plastic container with a tight-fitting lid (or a seal-able plastic bag) and store in the refrigerator or freezer. 

Serve cold or at room terperature.
