Chocolate Layer Cake

| Ingredients: |
Wet:
1 3/4 cups sugar
1 1/2 cups crumbled firm silken tofu
1 cup water
1/3 canola oil
2 tsp. apple cider vinegar or lemon juice
1 tsp. vanilla extract
Dry:
2 cups unbleached flour
1/2 cup unsweetened cocoa powder
2 scoops GeniSoy®
Ultra-XT Chocolate Shake (1/2 cup)
1 Tbsp. non-aluminum baking powder
1/4 tsp. salt
3 cups your favorite chocolate frosting |

| Instructions: |
- Preheat the oven to 350° F
- Mist three 9-inch round cake pans with
nonstick cooking spray, and set them aside
- Place the wet ingredients in a blender,
and process until smooth
- Place the dry ingredients in a large
mixing bowl, and stir them together
- Pour the wet ingredients into the dry
ingredients
- Beat well using a wire whisk or electric
beater to make a smooth batter
- Pour the batter equally into the prepared
baking pans
- Bake until a cake tester inserted in
the center of each cake comes out clean,
about 25 to 30 minutes
- Remove the pans from the oven, and place
them on cooling racks
- Allow the cakes to cool for 10 to 15
minutes
- Turn them out of the pans and allow
them to cool completely
- To frost the cake, place one of the
layers on an attractive serving plate,
flat side up
- Spread the top of the layer carefully
with 1/4 of the frosting
- Place the second cake layer, flat side
up, on top the first and flatten gently
with your hands
- Spread the top of the second layer with
1/3 of the remaining frosting.
- Place the third layer, flat side up,
on top and again flatten gently
- Frost the top and sides of the cake
using all of the remaining frosting
- Using a flat-edge knife or icing spatula,
make quick movements to create swirls
on the top and sides of the cake
- Let stand for about 1 hour to set the
frosting
- Serve at room temperature
