Mile-High Chocolate Layer Cake

Serves: 1 three-layer cake, 12-14 slices, 1 slice per serving

Ingredients:
Wet:
1 3/4 cups sugar
1 1/2 cups crumbled firm silken tofu
1 cup water
1/3 canola oil
2 tsp. apple cider vinegar or lemon juice
1 tsp. vanilla extract
Dry:
2 cups unbleached flour
1/2 cup unsweetened cocoa powder
2 scoops GeniSoy® Ultra-XT Chocolate Shake (1/2 cup)
1 Tbsp. non-aluminum baking powder
1/4 tsp. salt
3 cups your favorite chocolate frosting
 
Instructions:
  1. Preheat the oven to 350° F
  2. Mist three 9-inch round cake pans with nonstick cooking spray, and set them aside
  3. Place the wet ingredients in a blender, and process until smooth
  4. Place the dry ingredients in a large mixing bowl, and stir them together
  5. Pour the wet ingredients into the dry ingredients
  6. Beat well using a wire whisk or electric beater to make a smooth batter
  7. Pour the batter equally into the prepared baking pans
  8. Bake until a cake tester inserted in the center of each cake comes out clean, about 25 to 30 minutes
  9. Remove the pans from the oven, and place them on cooling racks
  10. Allow the cakes to cool for 10 to 15 minutes
  11. Turn them out of the pans and allow them to cool completely
  12. To frost the cake, place one of the layers on an attractive serving plate, flat side up
  13. Spread the top of the layer carefully with 1/4 of the frosting
  14. Place the second cake layer, flat side up, on top the first and flatten gently with your hands
  15. Spread the top of the second layer with 1/3 of the remaining frosting.
  16. Place the third layer, flat side up, on top and again flatten gently
  17. Frost the top and sides of the cake using all of the remaining frosting
  18. Using a flat-edge knife or icing spatula, make quick movements to create swirls on the top and sides of the cake
  19. Let stand for about 1 hour to set the frosting
  20. Serve at room temperature
