Thai Vegetarian Meatball Stir Fry

Peanut sauce is a traditional dip for grilled chicken skewers.  Here, it is combined with a few easy-to-find ingredients for a dinner you can prepare anywhere, anytime.  You can even pack it for a picnic lunch!
 
Measures Translation Table
 
Ingredients:
1 tablespoon peanut oil
1 red bell pepper, cored, seeded, and cut into 1-inch pieces
1 yellow bell-pepper, cored, seeded, and cut 1-inch pieces
One (10-ounce) package Lightlife Meatless Meatballs, frozen
1/2 cup bottled Thai peanut sauce
2 tablespoons water
2 scallions, cut into 1-inch pieces
 
Instructions:
  1. Heat the oil in a wok or skillet placed over high heat. Add both peppers, and cook, tossing and stirring for 30 seconds.
  2. Add the meatballs, tossing and stirring for 1 minute. Add the peanut sauce and water, stirring until smooth and bubbling.
  3. Add the scallions and reduce the heat to low. Cover and simmer for 10 minutes. Serve hot in bowls or over rice.
