sauce is a traditional dip for grilled chicken
skewers. Here, it is combined with a
few easy-to-find ingredients for a dinner
you can prepare anywhere, anytime. You
can even pack it for a picnic lunch! |

| Ingredients: |
1 tablespoon
peanut oil
1 red bell pepper, cored, seeded, and cut
into 1-inch pieces
1 yellow bell-pepper, cored, seeded, and cut
1-inch pieces
One (10-ounce) package Lightlife
Meatless Meatballs, frozen
1/2 cup bottled Thai peanut sauce
2 tablespoons water
2 scallions, cut into 1-inch pieces

| Instructions: |
- Heat the oil in a wok or skillet placed
over high heat. Add both peppers, and
cook, tossing and stirring for 30 seconds.
- Add the meatballs, tossing and stirring
for 1 minute. Add the peanut sauce and
water, stirring until smooth and bubbling.
- Add the scallions and reduce the heat
to low. Cover and simmer for 10 minutes.
Serve hot in bowls or over rice.
