| Ingredients: |

1/2 cups all-purpose flour
2
scoops GNC
Soy Protein, Unflavored
3/4 cup sugar
1 T. baking powder
1/2
tsp. cinnamon
1 tsp. grated lemon peel
2 egg whites
3/4 cup buttermilk
1/3 cup applesauce
1 tsp. vanilla extract
1 c. fresh or frozen blueberries

| Instructions: |
- Preheat oven to 400°F. Spray large
muffin tin (six 3" wide cups) with
non-stick vegetable spray).
- In a large bowl, combine flour, soy
protein powder, sugar, baking powder,
cinnamon and lemon peel. Make a well in
the center.
- In a separate bowl, beat egg whites
until foamy; add buttermilk, applesauce,
and vanilla. Add the buttermilk mixture
to the dry ingredients. Gently fold in
blueberries. Divide batter into muffin
cups, filling 3/4 full.
- Bake 22-25 minutes or until golden.
Cool 5 minutes in pan. Transfer to rack.
