Indian Soymeat Curry

This is an Indian soymeat curry with peas and potatoes - a winter favorite!  Serve with fresh tortillas or on rice.

Ingredients:

1 package Lightlife GimmeLean beef flavor

14.25 oz. diced tomatoes

10 oz. frozen peas

1 large potato, cut into large cubes

1 medium onion, diced

2 tablespoons canola oil

3 cloves

1 pod cardamom

1 stick cinnamon

Spices

1/2 teaspoon turmeric

1/4 teaspoon red chili powder

3/4 teaspoon garam masala

2/3 teaspoon ground coriander

1/3 teaspoon ground cumin

1/2 teaspoon ground fresh red chilies

1/4 teaspoon fresh garlic

1/4 teaspoon fresh ginger

lemon to taste

 
Instructions:

1.  in a medium pot, add oil and allow to warm.  Add cloves, cardamom, and cinnamon.  Allow to warm in oil until sizzling.

2.  Add onion and cook until soft.  Add GimmeLean (break up into small pieces with a spatula), tomatoes with juice, peas and diced potato.

3.  Add all of the spices and cook for 15 minutes over low heat. 

4.  Once heated through, add lemon juice.  Garnish with fresh coriander.
