| Ingredients: |

package Gimme
Lean! Sausage
2 tablespoon canola oil
1/8 cup onions, diced
1/8 cup red and green peppers, diced
2 packages tofu, crumbled; or 6 eggs or egg
substitute equivalent, scrambled
1/2 cup light cheddar cheese or cheese alternative,
shredded
salt & pepper to taste
1 package flour tortillas |

| Instructions: |
- Sauté Gimme Lean! Sausage
in 2 tablespoon oil with onions, and peppers
until the Gimme Lean! Sausage is
browned.
- Add tofu or eggs. Continue to stir mixture
until tofu is hot, or eggs firm up.
- Add salt and pepper to taste. Gently
fold in cheese to melt. Serve in warm
tortilla with your favorite salsa.
