| Ingredients: |
1 3/4
cups unbleached or whole-wheat flour, or half-and-half
of each
3 scoops GeniSoy®
Ultra-XT Chocolate Shake (3/4 cup)
1/2 cup unsweetened cocoa
2 tsp. baking soda
1/4 tsp. salt
1/4 cup oil
1 1/2 cups sugar
1 tsp. peppermint extract
3 cups finely grated zucchini
1 cup broken walnuts (optional) |

| Instructions: |
- Preheat the oven to 350° F
- Mix the flour, protein powder, cocoa,
baking soda, and salt together in a bowl
- Beat the oil, sugar, zucchini, and peppermint
extract together with a mixer
- Add the dry ingredients and beat until
smooth
- Fold in the walnuts
- Drop by tablespoonfuls onto cookie sheets,
and bake for about 12 minutes
