Fudgy Cocoa Cookies

Serves: 48 cookies, 1 cookie per serving

Ingredients:
1 3/4 cups unbleached or whole-wheat flour, or half-and-half of each
3 scoops GeniSoy® Ultra-XT Chocolate Shake (3/4 cup)
1/2 cup unsweetened cocoa
2 tsp. baking soda
1/4 tsp. salt
1/4 cup oil
1 1/2 cups sugar
1 tsp. peppermint extract
3 cups finely grated zucchini
1 cup broken walnuts (optional)
 
Instructions:
  1. Preheat the oven to 350° F
  2. Mix the flour, protein powder, cocoa, baking soda, and salt together in a bowl
  3. Beat the oil, sugar, zucchini, and peppermint extract together with a mixer
  4. Add the dry ingredients and beat until smooth
  5. Fold in the walnuts
  6. Drop by tablespoonfuls onto cookie sheets, and bake for about 12 minutes
