| Ingredients: |

Mori-Nu®
Silken Tofu Firm
1 tbsp olive oil
3 ea scallions
3 large cloves garlic
1/3 cup chopped green bell pepper
1 tbsp tamari or soy Sauce
3/4 cup medium hot salsa
1 tbsp lime juice
1/4 cup chopped fresh cilantro |

| Instructions: |
- Drain Mori-Nu® Silken Tofu Firm
and pat dry. Grate tofu into a medium
bowl and place in microwave for 2-1/2
minutes.
- Drain liquid that will be drawn from
the tofu.
- Heat olive oil in a medium frying pan
over medium high flame. Add scallions,
garlic and bell pepper and saute for 3
minutes or until crisp tender.
- Add grated Mori-Nu® Silken Tofu
Firm and continue to cook for 5 minutes,
stirring frequently.
- Stir in Tamari, salsa, lime juice and
chopped fresh cilantro.
- Lower flame and simmer five minutes
or until ready to serve.
- Serve with warm whole wheat tortillas,
taco shells or alone as a breakfast "scramble".
