Easy Cream of Broccoli Soup

Serves: 8-10 cups, 2 cups per serving

Ingredients:
4 cups chopped broccoli (flowers, stalk, and upper stems)
3 cups cubed potatoes
3 cups water
1 cup chopped parsley
1/2 cup chopped fresh dill
2 scoops GeniSoy® Ultra-XT Protein Powder (1/2 cup)
1/2 cup nutritional yeast 2 tablespoons soy sauce
1 tsp. salt
1 cup chopped onion
 
Instructions:
  1. In a soup pot, boil the broccoli, potatoes, and onion in the water for 10 minutes.
  2. Add the parsley and dill to the boiling vegetables, and simmer for 5 more minutes.
  3. In a blender or food processor, blend the contents of the soup pot along with the dissolved protein powder and nutritional yeast & soy sauce in small batches .
  4. Do not overfill the blender or food processor .
  5. Put the blended soup back on the stove, and heat slowly but do not boil .
  6. Add the salt and serve hot.
