| Ingredients: |

Lean! Beef
1 (20 ounce) can pineapple chunks
1/4 cup chopped onion, chopped
2 tablespoons butter or oil
1/2 teaspoon curry powder
1 tablespoon soy sauce
1 tablespoon cornstarch
1/4 cup sugar (or Florida Crystals or Sucanat)
1/3 cup white vinegar |

| Instructions: |
- Drain pineapple chunks, reserving 1/2
cup syrup, set aside.
- Combine Gimme Lean! Beef and onion.
Shape mixture into small meatballs, inserting
a pineapple chunk in the center of each.
- Set any remaining pineapple chunks aside.
Combine butter and curry powder in a non-stick
pan.
- Brown meatballs in butter mixture over
medium heat.
- Drain meatballs, combine drippings in
a saucepan with the following: reserved
pineapple syrup, curry drippings, vinegar,
sugar, cornstarch, and soy sauce in sauce
pan; stir well.
- Add pineapple chunks; cook over medium
heat, stirring constantly, until thickened
and bubbly.
- Pour over meatballs. Serve warm. Great
over rice with steamed oriental vegetables.
