| Ingredients: |
1 pkg.
Lightlife Italian Lean Links™
1 T. canola oil
2 cups zucchini, diced
2 cups carrot, diced
1 can (16oz) red kidney beans
½ cup small macaroni pasta, uncooked
32 oz. Low sodium vegetable broth
1 can (14.5oz) diced tomatoes
1 T. minced garlic
½ tsp. Ground black pepper
½ tsp. salt

| Instructions: |
- Heat canola oil in a large saute pan.
Add the Lean Links and stir-fry until
evenly browned. Remove from heat and cut
into bite-sized pieces. Set aside.
- Combine the remaining ingredients in
a large saucepan and bring to a boil.
Cover, reduce heat and simmer 10 minutes
or until pasta is done. Add the Lean Links
pieces and cook over low heat 5 minutes
more to heat through. Spoon into bowls
and serve with crusty bread.
