Dessert Crepes

Serves: 6 10-inch crepes, 1 crepe per serving

Ingredients:
Dry
1 1/2 scoops GeniSoy® Ultra-XT Vanilla Shake (1/2 cup plus 2 Tbsp.)
6 Tbsp. unbleached flour
1/4 tsp. salt
Wet
2 cups vanilla soymilk
1 Tbsp. Oil
 
Instructions:
  1. Stir the dry ingredients together in a bowl
  2. Pour in the soymilk and whip
  3. Add 1 1/2 tsp. of the oil to a hot non-stick crepe pan, then roll and turn the pan to cover the bottom with the oil
  4. Pour in 1/2 cup of crepe batter, and immediately roll and turn the pan so it is evenly covered with the batter
  5. Cook over medium-heat until the crepe starts to bubble and pull away from the side until it show flecks of golden color
  6. Prepare the remaining crepe batter the same way. Serve hot
