cup plus 2 T. all-purpose flour
4
scoops GNC
Soy Protein, Unflavored
1 tablespoon baking powder
Pinch salt
1 egg
1 1/2 cups low-fat milk
2/3 cup sugar
3 tablespoons canola oil
1 teaspoon vanilla
1/2 cup cranberries, fresh or frozen
1/2 cup raisins

| Instructions: |
- Preheat the oven to 400° F
- Spray muffin tin with non-stick spray.
- In a large bowl, whisk together the
flour, soy protein, and salt.
- In another bowl, whisk the egg with
the milk, sugar, oil and vanilla.
- Mix the egg mixture into the flour mixture
until they are just combined
- Mix in the cranberries and raisins
- Fill the cavities of the muffin pan
three-quarters full.
- Bake until muffins are pale gold and
a knife inserted into the center of one
comes out clean, about 14 minutes
- Let sit 2 minutes.
- Unmold and serve.
