Cranberry-Orange Bread

Serves: 1 slice, makes 12 slices

Ingredients:
2 cups flour
1 cup Vanilla Personal Edge® Fat Metabolizing Drink Mix
3/4 cup sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 cup orange juice
2 eggs
1/3 cup soy oil
3/4 cup dried or chopped fresh cranberries
1/2 cup chopped pecans (optional)
1 T. grated orange peel
 
Instructions:
  1. Preheat oven to 350°F.
  2. Grease and flour the bottom of a 9x5-inch pan.
  3. In a large mixing bowl, combine flour, Personal Edge® powder, sugar, baking powder, baking soda, and salt.
  4. In another bowl, beat orange juice, eggs, oil, and orange peel until thoroughly mixed. Add to dry ingredients, mixing until just combined.
  5. Stir in cranberries and pecans (is using).
  6. Spoon batter into prepared pan.
  7. Bake 60-70 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool 10 minutes, remove from pan. Cool completely.
