Cranberry Nut Bread

Serves: 2 loaves, 16 slices, 1 slice per serving

Ingredients:
2 1/2 cups unbleached or half whole wheat flour
1 tsp. non-aluminum baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 (12.3-oz) package firm silken tofu
1 cup brown sugar
1/2 cup oil
2 tsp. vanilla
2 scoops GeniSoy® Ultra-XT Vanilla Shake
1 cup fresh cranberries
1/2 cup chopped walnuts
 
Instructions:
  1. Preheat the oven to 350° F
  2. Combine the flour, baking powder, baking soda, and salt in a bowl
  3. Mix together
  4. With a mixer, beat together the tofu, brown sugar, oil, vanilla, and protein powder
  5. Add the flour mixture and beat in until blended
  6. Add the cranberries and walnuts, and beat again briefly until blended
  7. Divide the batter evenly between 2 oiled loaf pans
  8. Bake for about 50 to 60 minutes
