| Ingredients: |
2 1/2
cups unbleached or half whole wheat flour
1 tsp. non-aluminum baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 (12.3-oz) package firm silken tofu
1 cup brown sugar
1/2 cup oil
2 tsp. vanilla
2 scoops GeniSoy®
Ultra-XT Vanilla Shake
1 cup fresh cranberries
1/2 cup chopped walnuts |

| Instructions: |
- Preheat the oven to 350° F
- Combine the flour, baking powder, baking
soda, and salt in a bowl
- Mix together
- With a mixer, beat together the tofu,
brown sugar, oil, vanilla, and protein
powder
- Add the flour mixture and beat in until
blended
- Add the cranberries and walnuts, and
beat again briefly until blended
- Divide the batter evenly between 2 oiled
loaf pans
- Bake for about 50 to 60 minutes
