Heat the oil in a large, deep skillet over
medium heat.

Add the onion and sauté for about
5 minutes. Stir in the bulgur and
salt, and cook, stirring, until the bulgur
is lightly browned (about 5 more minutes).

Pour in the boiling water, cover, and remove
from heat. Let stand for 15 minutes,
until all the water is absorbed.
4.
Stir in the Zoe cereal, and serve topped
with minced walnuts, if desired.
