Corn Casserole

This mouthwatering dish is packed full of fresh corn kernels. If fresh corn is unavailable, you may use defrosted frozen corn. Serve this delicious casserole with Mexican entrees or as a unique substitute for rice or potatoes.

Ingredients:
1 cup fresh corn kernels
1 15oz. can cream-style corn
1 pkg. (8.5oz) corn muffin mix
1 scoop GeniSoy® Natural Protein Powder
1 cup fat free sour cream
½ tsp. salt
1/3 cup soymilk
¼ cup chopped green onions
2 egg whites
2 T. melted margarine
 
Instructions:
  1. Preheat oven to 375°F. Spray 13”x9” baking pan with nonstick cooking spray.
  2. Mix all of the ingredients together until well blended. Bake in preheated oven for 35-45 minutes until golden brown.
