mouthwatering dish is packed full of fresh
corn kernels. If fresh corn is unavailable,
you may use defrosted frozen corn. Serve this
delicious casserole with Mexican entrees or
as a unique substitute for rice or potatoes.

| Ingredients: |
1 cup
fresh corn kernels
1 15oz. can cream-style corn
1 pkg. (8.5oz) corn muffin mix
1 scoop GeniSoy®
Natural Protein Powder
1 cup fat free sour cream
½ tsp. salt
1/3 cup soymilk
¼ cup chopped green onions
2 egg whites
2 T. melted margarine

| Instructions: |
- Preheat oven to 375°F. Spray 13”x9”
baking pan with nonstick cooking spray.
- Mix all of the ingredients together
until well blended. Bake in preheated
oven for 35-45 minutes until golden brown.
