Classic Sour Cream Coffee Cake

Soy protein powder is a stealth ingredient in this version of the American classic coffee cake. You won't notice this secret ingredient while enjoying this delicious treat, but you will notice how satisfied and happy you'll feel hours afterward!

Unwrap the butter ahead of time and place it directly in the mixing bowl to soften

Ingredients:
1/2 cup (1 stick) unsalted butter, softened
1/3 cup granulated sugar
2 large eggs
1 tsp. vanilla extract
3 scoops GeniSoy® Natural Protein Powder
3/4 cup all-purpose flour
1/2 tsp. salt
1 tsp. baking powder
1/8 tsp. baking soda
1/2 cup sour cream
1/4 cup low fat milk
Topping
2 T. brown sugar
1/2 tsp. cinnamon
1/2 cup chopped walnuts or pecans (optional)
 
Instructions:
  1. Preheat the oven to 350°F (325°F for a glass pan). Lightly spray an 8" round or square pan with nonstick spray.
  2. In a large bowl, beat the butter for several minutes with an electric mixer at high speed. Add the sugar and beat for several minutes longer. Add the eggs, one at a time, beating well after each; then beat in the vanilla.
  3. In a second bowl, combine the soy protein powder, flour, salt, baking powder and baking soda; slowly mix them together with a whisk.
  4. In a small bowl, whisk together the sour cream and milk until smooth.
  5. Add the dry ingredients in three installments to the butter mixture, alternating with the sour cream-milk mixture, beginning and ending with the dry (dry-wet-dry-wet-dry). After each addition, use a spoon or rubber spatula to stir from the bottom of the bowl just enough to blend. Dont' overmix.
  6. Transfer the batter to the prepared pan, spreading it evenly into place. Mix together the brown sugar and cinnamon and optional nuts, and sprinkle this on top before baking.
  7. Bake in the middle of the oven for 20-25 minutes, or until a toothpick inserted all the way into the center comes out clean. Cool for at least 15 mintues before cutting and serving.
