Chip Soy Waffles With Cherry Sauce

| Make
these chocolate studded waffles in a heart
shaped waffle maker. Top with your favorite
tofu vanilla 'ice cream' then drizzle with
my easy Cherry Sauce for a heavenly indulgence
perfect for any Valentine's Day celebration.

1/2 cups all-purpose flour
4 scoops GNC
Soy Protein, Unflavored
3 tsp. baking powder
1 tsp. baking soda
3 T. sugar
1/2 tsp. salt
3/4 tsp. cinnamon
Wet Ingredients
3 large eggs
2 cups plain soymilk, such as 8th

1 stick salted butter, melted
1 tsp. vanilla
1/4 cup miniature chocolate chips
Cherry Sauce
1 cup cherry preserves
2 tsp. cornstarch

| Instructions: |
- Preheat your waffle maker.
- In a large bowl, whisk together the
dry ingredients.
- In another large bowl, whisk together
the wet ingredients.
- Make a well in the center of the dry
mixture and pour n the wet ingredients,
then whisk the wet into the dry ingredients
until well moistened. The batter will
look lumpy like a muffin batter.
- Spoon the amount of batter recommended
by the manufacturer of your waffle maker
(usually 1/2 tow 3/4 cup) onto the hot
waffle maker. With the back of a spoon
or spatula, spread the batter to within
1/4" of the edge of the grids.
- Serve immediately with Cherry Sauce
(recipe below) and your choice of vanilla
flavored frozen tofu ice cream, whipped
cream or sour cream

Sauce
- In a 3-4 cup microwavable bowl, whisk
preserves and cornstarch.
- Microwave uncovered on HIGH (100% power)
for 4 minutes, stirring halfway through
the cooking time. Let stand to cool slightly
before serving over waffles.
