Chocolate Chip Soy Waffles With Cherry Sauce

Make these chocolate studded waffles in a heart shaped waffle maker. Top with your favorite tofu vanilla 'ice cream' then drizzle with my easy Cherry Sauce for a heavenly indulgence perfect for any Valentine's Day celebration.

PREP & COOKING TIME: 30 minutes

Ingredients:

Dry Ingredients

1 1/2 cups all-purpose flour
4 scoops GNC Soy Protein, Unflavored
3 tsp. baking powder
1 tsp. baking soda
3 T. sugar
1/2 tsp. salt
3/4 tsp. cinnamon
Wet Ingredients
3 large eggs
2 cups plain soymilk, such as 8th Continent
1 stick salted butter, melted
1 tsp. vanilla
1/4 cup miniature chocolate chips
Cherry Sauce
1 cup cherry preserves
2 tsp. cornstarch

 
Instructions:
  1. Preheat your waffle maker.
  2. In a large bowl, whisk together the dry ingredients.
  3. In another large bowl, whisk together the wet ingredients.
  4. Make a well in the center of the dry mixture and pour n the wet ingredients, then whisk the wet into the dry ingredients until well moistened. The batter will look lumpy like a muffin batter.
  5. Spoon the amount of batter recommended by the manufacturer of your waffle maker (usually 1/2 tow 3/4 cup) onto the hot waffle maker. With the back of a spoon or spatula, spread the batter to within 1/4" of the edge of the grids.
  6. Serve immediately with Cherry Sauce (recipe below) and your choice of vanilla flavored frozen tofu ice cream, whipped cream or sour cream

Cherry Sauce

  1. In a 3-4 cup microwavable bowl, whisk preserves and cornstarch.
  2. Microwave uncovered on HIGH (100% power) for 4 minutes, stirring halfway through the cooking time. Let stand to cool slightly before serving over waffles.
