Chocolate Chip Bars

Serves: 2 dozen bars, 1 bar per serving

Ingredients:
2 cups unbleached flour
1/2 cup whole wheat flour
1 tsp. non-aluminum baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 (12.3-oz) package firm silken tofu, crumbled
1 cup brown sugar
1/2 cup oil
2 tsp. vanilla
2 scoops GeniSoy® Ultra-XT Vanilla Shake (1/2 cup)
1 cup chocolate chips
1/2 cup chopped walnuts or pecans
 
Instructions:
  1. Preheat the oven to 350° F
  2. Mix together the flours, baking powder, baking soda, and salt in a bowl
  3. In a mixer, beat together the tofu, brown sugar, oil, vanilla, and protein powder until creamy
  4. Add the chocolate chips and nuts, and beat again just until blended
  5. Spread the batter into a 9x13-inch pan, and bake for 20 to 25 minutes, or until golden brown
