| Cherries
are their best this time of year. You can
eat them right off the stems, use them in
pies, or as toppings for desserts. I designed
this creamy cherry soup to add elegance to
this popular summer fruit. |

| Ingredients: |

3
cans black cherries, drained
1 cup water
1/4 cup sugar
1 tsp. lemon juice
1/4 tsp. cinnamon
2
scoops GNC
Soy Protein, Unflavored
2 cups plain soy milk

| Instructions: |
- In a saucepan over medium high heat,
simmer the cherries in the water until
they are soft, about 10 minutes. Stir
occasionally.
- While the cherries are simmering, add
the sugar, lemon juice and cinnamon; mix
thoroughly.
- Transfer the cherry mixture to a food
processor or blender and puree until it
forms a thick liquid. It also should be
cooling down. When the mixture reaches
room temperature, add the soy protein
and soy milk; and continue to puree. Serve
chilled.
