that rounds out any meal with a tang - and
7 grams of soy protein per serving! |

| Ingredients: |
1 (17-oz.)
can pitted red tart cherries, drained, with
juice reserved
2/3 cup sugar
1 cup unbleached flour
1 tsp. non-aluminum baking powder
2 scoops GeniSoy®
Ultra-XT Vanilla Shake (1/2 cup)
1 cup soymilk |

| Instructions: |
- Preheat the oven to 350° F
- Drain the cherry liquid into a small
saucepan, and stir in 1/3 cup of sugar
- Bring to a boil over low heat
- Mix together the flour, baking powder,
protein powder, and remaining sugar in
a food processor
- While the food processor is running,
pour in the soymilk and process just until
it is mixed in
- Pour the batter into an oiled 8x8-inch
square or round pan
- Sprinkle the drained cherries over the
top evenly
- Pour the boiling sweetened cherry liquid
over the top of all
- Bake for about 45 minutes, or until
the middle springs back to the touch of
a finger and it is browned
