Cherry Cobbler

Serves: 4-6
 
Put your baking cap on and try this tart dessert that rounds out any meal with a tang - and 7 grams of soy protein per serving!

Ingredients:
1 (17-oz.) can pitted red tart cherries, drained, with juice reserved
2/3 cup sugar
1 cup unbleached flour
1 tsp. non-aluminum baking powder
2 scoops GeniSoy® Ultra-XT Vanilla Shake (1/2 cup)
1 cup soymilk
 
Instructions:
  1. Preheat the oven to 350° F
  2. Drain the cherry liquid into a small saucepan, and stir in 1/3 cup of sugar
  3. Bring to a boil over low heat
  4. Mix together the flour, baking powder, protein powder, and remaining sugar in a food processor
  5. While the food processor is running, pour in the soymilk and process just until it is mixed in
  6. Pour the batter into an oiled 8x8-inch square or round pan
  7. Sprinkle the drained cherries over the top evenly
  8. Pour the boiling sweetened cherry liquid over the top of all
  9. Bake for about 45 minutes, or until the middle springs back to the touch of a finger and it is browned
