| Ingredients: |
Dry
2 cups whole wheat pastry flour
1 scoop GeniSoy®
Ultra-XT Vanilla Shake
1/2 cup sugar
1 Tbsp. non-aluminum baking powder
1/2 tsp. salt
Liquid
1 1/2 cups soymilk
1/4 cup canola oil
1 cup fresh or frozen blueberries |

| Instructions: |
- Preheat the oven to 400° F
- Mix the dry ingredients together and
make a well in the middle
- Whip together the soymilk and oil
- Pour into the well in the dry ingredients,
and stir just until blended.
- Fold in the blueberries
- Pour into oiled muffin tins
- Bake for about 20 minutes until browned
