| Ingredients: |
2 cups
flour
1 cup Vanilla
Personal Edge® Fat Metabolizing Drink
Mix
3/4 cup sugar
2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1 1/4 cups orange juice
2 eggs
1/3 soy oil
3/4 cup frozen blueberries
Topping
1/8 tsp. cinnamon
1 T. sugar |

| Instructions: |
- Preheat oven to 400 degrees.
- In a large bowl, combine flour, Vanilla
Personal Edge® powder, sugar, baking
powder, cinnamon, baking soda and salt.
Set aside.
- In a medium bowl, beat orange juice,
eggs, and oil until thoroughly mixed.
Add to dry ingredients, mixing until just
combined.
- Fold in blueberries.
- Spoon batter into prepared muffin tins.
- Combine cinnamon and sugar for topping
and sprinkle over top of muffins.
- Bake for 20 minutes.
- Cool on wire rack.
