Blueberry Muffins

Serves: 1 muffin, makes 12 muffins

Ingredients:
2 cups flour
1 cup Vanilla Personal Edge® Fat Metabolizing Drink Mix
3/4 cup sugar
2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1 1/4 cups orange juice
2 eggs
1/3 soy oil
3/4 cup frozen blueberries
Topping
1/8 tsp. cinnamon
1 T. sugar
 
Instructions:
  1. Preheat oven to 400 degrees.
  2. In a large bowl, combine flour, Vanilla Personal Edge® powder, sugar, baking powder, cinnamon, baking soda and salt. Set aside.
  3. In a medium bowl, beat orange juice, eggs, and oil until thoroughly mixed. Add to dry ingredients, mixing until just combined.
  4. Fold in blueberries.
  5. Spoon batter into prepared muffin tins.
  6. Combine cinnamon and sugar for topping and sprinkle over top of muffins.
  7. Bake for 20 minutes.
  8. Cool on wire rack.
