You will appreciate this cookie that lets you have it all:  A perfect hit for your sweet tooth and with a respectable protein content that you can't even detect!  Allowing these to become habit-forming is actually kind of a nice idea.

Ingredients:

nonstick spray for the pan

3 large eggs

1/2 cup light brown sugar

1/4 cup sugar

1/4 cup canola oil

1 teaspoon vanilla extract

1/8 almond extract

6 scoops GeniSoy® UltraXT Natural Vanilla Shake Powder

1 cup all-purpose flour

1/2 teaspoon salt

1/3 cup chopped almonds or pecans

 
Instructions:

1.  Preheat oven to 350°F.  Lightly spray a baking tray with nonstick spray.

2.  Use a large whisk to beat the eggs in a medium-large bowl.  Beat in the sugars and then the oil and extracts.  Beat in the GeniSoy powder, then switch to a spoon and mix in the flour, salt and nuts.  Knead the dough briefly in the bowl, spraying the palm of your hand with a little nonstick spray to prevent sticking.

3.  Divide the dough in half, and form each half into a log on the prepared baking tray.  Each log should be about 8 1/2 inches long, 2 inches wide, and about an inch high.

4.  Bake in the center of the oven for 20 minutes.  Slice, then bake again for 15 minutes.  Cool on rack at least 10 minutes before serving.
