Preheat oven to 350°F. Lightly
spray a baking tray with nonstick spray.

Use a large whisk to beat the eggs in a
medium-large bowl. Beat in the sugars
and then the oil and extracts. Beat
in the GeniSoy powder, then switch to a
spoon and mix in the flour, salt and nuts.
Knead the dough briefly in the bowl, spraying
the palm of your hand with a little nonstick
spray to prevent sticking.

Divide the dough in half, and form each
half into a log on the prepared baking tray.
Each log should be about 8 1/2 inches long,
2 inches wide, and about an inch high.
4.
Bake in the center of the oven for 20 minutes.
Slice, then bake again for 15 minutes.
Cool on rack at least 10 minutes before
serving.
