topping on cooked fish, potatoes, or vegetables

NOTE:
Warm the soy milk ahead of time - it blends
in better when heated.

Place a heavy-bottomed medium-sized saucepan
over medium heat for about 30 seconds.
Add the oil, shallots, and salt and cook,
stirring with a wooden spoon, for about
3 minutes, or until the shallot is soft.

Stir constantly as you sprinkle in the flour,
then continue to cook, stirring frequently,
for another 3 minutes or so.

Switch from the spoon to a whisk and gradually
drizzle in the milk, whisking until smooth.
Add the bay leaf, and cook, stirring frequently,
until sauce thickens.
4.
Reduce the heat to very low and taste to
correct salt, if necessary. Season
to taste with a little white pepper and
nutmeg. Serve hot.
