Artichoke, Smart Link & Chickpea Ragout

Simple, fragrant and filling, this Summer dish comes from simmering local produce such as artichokes, squash, tomatoes and basil with the flavor of Italian soy sausage. This dish is really delicious the day after preparing when all the flavors really marry. Serve it over pasta, orzo or polenta.

Ingredients:
1/2 tablespoon extra virgin olive oil
1 cup sliced onion
2 cloves minced garlic
1 teaspoon dried oregano
1 package Lightlife Smart Links™, cut into 1 inch lengths
1 medium zucchini or yellow squash, sliced
14 ounce can quartered artichoke hearts in brine, drained
1 cup chickpeas, drained
2 cups diced tomatoes in puree
¼ cup chopped fresh basil
½ teaspoon sea or kosher salt
¼ teaspoon freshly ground black pepper
¼ cup grated Asiago or Parmesan cheese
 
Instructions:
Heat the oil in a large sauté pan with raised sides. Add the onion, garlic and oregano and sauté over medium heat for 2 minutes. Add the Smart Links and continue to sauté. Add the remaining ingredients, except the cheese and simmer uncovered for 15 minutes until well combined. Sprinkle the cheese over the top and serve.
