Aria High Protein Apple Pancakes

Serves: 16 pancakes, 1 pancake per serving

Ingredients:
6 slices whole wheat bread
3 scoops Aria™ Women's Protein - Vanilla
1/2 cup all-purpose flour
4 large baking apples, i.e., Jonathan, peeled and cored
2 Tbs. lemon juice
2 Tbs. granulated sugar
2 tsp. ground cinnamon
6 large egg whites (add 2 egg yolks, if desired, for fluffier pancakes)
3/4 cup skim milk
 
Instructions:
  1. With the chopping blade of food processor, crumb bread and place in large mixing bowl.
  2. Add Aria™ Women's Protein - Vanilla and flour to bread crumbs and stir with a fork to blend.
  3. Using the grating blade of the food processor, grate apples.
  4. Place in medium mixing bowl and sprinkle lemon juice, sugar, and cinnamon over apples. Stir with a fork to mix.
  5. Add egg whites and milk. Stir to mix again.
  6. Add apple/egg mixture to bread crumb mixture and stir with fork well to blend.
  7. Generously spray griddle with nonstick cooking spray. Preheat griddle to medium high heat. With 1/4 cup measure, dollop batter onto heated griddle.
  8. Spread batter to 4-inch circles. Cook until both sides are golden brown and pancakes feel light. Don't turn more than twice per side.
