Applesauce Raisin Muffins

Serves: 12 muffins, 1 muffin per serving
 
Great for weekend breakfasts or for healthy snacking on-the-go. A single muffin contains about 5 grams of soy protein.

Ingredients:
Liquid
1 cup applesauce
1 cup orange juice
2 Tbsp. Oil
2 Tbsp. Liquid sweetener
1 Tbsp. Brown sugar
Dry
1 3/4 cup flour
2 1/2 scoops GeniSoy® Ultra-XT Protein Powder
1 1/2 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. salt
1/2 cup raisins
 
Instructions:
  1. Preheat the oven to 350° F.
  2. Mix the liquid ingredients in a mixing bowl
  3. Sift the dry ingredients into the liquid ingredients. Stir well but don't over beat
  4. Add the raisins and mix them in just before spooning the muffins into the lightly oiled muffin tins
  5. Bake for 20 to 25 minutes
  6. Test the muffins by inserting a toothpick in the middle of a muffin (If the toothpick comes out clean, the muffins are done)
